A wine of great structure and aromatic richness. Fine, complex and long-lived. The floral, peach, pear, candied fruit and dried fruit notes will delight your taste buds, alone or with a lobster medallion, sweetbreads or simply goat cheese.

Territory:
The Cuvée Prestige du Domaine de Pouilly is a selection of three plots (or Climats) located in the hamlet of Pouilly, in the heart of the Pouilly-Fuissé appellation. These three terroirs, with character, are complementary and give the Cuvée Prestige all its finesse and elegance.
The wines are vinified separately and then blended before bottling, in proportions that vary from one year to another, always with a view to balance, quality and high aging potential.

Harvest:
Mid-September, by hand.

Pressing:
The whole bunches are pressed in a pneumatic press, then the must
it rests for 12 hours at a temperature of 18°C ​​to favor natural sedimentation.

Yeasts:
We promote fermentation with natural yeasts, specific to the region.

Fermentation:
The grape juice is put directly into barrels for alcoholic fermentation.
The malolactic fermentation takes place 100% naturally.

Refinement:
Ten months, 100% in French, Allier and Vosges oak barrels with 10% new barrels.

Total production 5000 bottles
