Collection: Domaine Rossignol-Février

Since 1920, Domaine Rossignol-Février has been bottling the wines produced by the family vineyards. Five generations have farmed their plots in the center of the Cote de Beaune, with vineyards in Meursault, Volnay, Pommard and Beaune. Today Frederic Rossignol cultivates 7.5 hectares in a biodynamic way, with Demeter certification since 2009. The vineyards are planted with a density of 10,000 vines per hectare, with an average age of the vines of 40 years.

The estate adapts its vinification to each vintage and each appellation. The grapes are harvested by hand and arrive in the cellar in boxes. The grapes are passed over a vibrating table which allows all unwanted elements to be removed. The vinification takes place in stainless steel vats: Frédéric and his son carry out little punching down to avoid extracting too dry tannins which would distort the expression of the wine. The domaine, on the other hand, carries out several pumping overs which allow for a gentler and non-aggressive extraction.
