In southern Burgundy, exactly within the municipality of Fleurie, the family-run winery Louis Loron et Fils has been offering quality Crémant de Bourgogne since 1932. After 4 generations, it is still one of the only production companies in Beaujolais to produce Classic Method sparkling wines. It was Charles Loron in the 1930s who, at the suggestion of one of his Champagne employees, began to experiment with the most famous sparkling wine technique. In 1975, after the official birth of the 'Crémant de Bourgogne' denomination, the winery underwent a definitive leap in quality, also aided by the modernization of the premises and technologies that occurred over the following decades.

For over 80 years the Loron Luis et Fils winery has been producing wines according to traditional methods. The cultivated varieties are Gamay for the red grapes and Chardonnay for the white ones.

In order to preserve the integrity of the grapes, the harvest is carried out by hand in small boxes and the grapes are then softly pressed. The must obtained is left for 18-24 hours to clarify spontaneously, so that the finished wine is clear and free of unpleasant aromas, and subsequently undergoes alcoholic fermentation in steel. Once the fermentation phase is over and following a brief refinement, the time comes to compose the cuvée, carefully choosing the percentages of the blend based on the characteristics of each variety. In fact, if on the one hand Chardonnay gives elegance and minerality, Gamay brings structure and liveliness. The sparkling wine base is then bottled and added with the liqueur d'expédition, followed by a period of rest on the yeasts of at least 12 months. The manufacturing process is concluded by dégorgement and subsequent dosage.
