THE WINE
Born from estate vineyards within the Nervo geographical mention, bordering the nearby Bernardot. The significant slope of this hillside makes vineyard work more challenging but improves drainage and sun exposure. The perfect microclimatic conditions and the "poorness" of the white marls (sandy-calcareous) give the wine vertical tension and extreme finesse. On the palate, it reveals a dense and mineral texture; notes of raspberry, cinnamon, and fresh mint, followed by a finish characterized by a linear tannic structure.
Serving temperature: 16°C.
VINIFICATION
Harvest:
manual in crates, in the first ten days of October (with possible variations depending on seasonal climatic trends). Fermentation and maceration:
at controlled temperature in steel tanks, not exceeding 30°C, for about 3-4 weeks. After primary fermentation, malolactic fermentation follows, usually completing in about a month.
Aging:
in large Slavonian oak barrels for about 12 months, then in concrete tanks for another 6-9 months, and subsequently in bottle before commercialization.

Altitude: 310 - 370 m a.s.l.
Exposure: South.
Soil composition: calcareous-clayey marls with significant sandy veins.
Year of planting: 1967 - 2004.
Training system: Guyot.
