The selected vineyards, located between 300 and 600 meters above sea level, are cultivated using the Guyot system, on clayey soils with limited grape yields per hectare.
The Frappato grapes are harvested at the first sign of ripeness, so that all the typical freshness remains in the must, which is fermented very slowly in small stainless steel tanks.
Nero d'Avola grapes, on the other hand, are left on the vine for a slight wilting and natural dehydration. They are then harvested later and, with extreme care, placed in wooden crates. After a light pressing, the must ferments at a controlled temperature.
The two musts then evolve according to their typical characteristics, and when our "master" decides, they are slowly blended, in the time and proportions required by the individual harvest. The natural sweetness of the wine is obtained by stopping the fermentation through the "cold" process. The wine matures for a few months in stainless steel tanks.
This wine, with its authentic Mediterranean fragrance, is born from old vineyards shaken by intense impulses that rise from the deep roots of the earth to stir the finest grapes, vibrant to the warm southern winds and the cold northern winds.
