The winery is located in Sury-en-Vaux, a wine-growing town 6 km north of Sancerre, and the vineyard in Pouilly sur Loire in the municipality of St Andelain.
The vines that produce this Pouilly-Fumé are planted on soils composed of 100% Kimmeridgian marl and benefit from a south-west exposure. The Pastou family takes a sustainable approach to their vineyard, respecting traditions and the environment.
As for the winemaking: once the harvest has been pressed and after decanting for 24-48 hours, each parcel is vinified separately in temperature-controlled vats. Fermentation takes place at a low temperature, 16°, to finish at 18-20° for about fifteen days. Once fermentation is complete, the wine is drawn off and refined in vats awaiting bottling, which takes place starting in spring.
