ORGANOLEPTIC CHARACTERISTICS
The intense yellow color is crossed by golden reflections. Its scent is complex
but delicate. Fruity notes are perceived, particularly pear and peach.
On the palate it is well structured and with a lasting flavour. After a few moments in the glass, the Pinot Grigio develops a full aromaticity.

RECOMMENDED COMBINATIONS
Harmonious in structure, Pinot Grigio enhances the qualities of important first courses, cod, and intensely flavoured cheeses, even blue cheeses.
It is served at a temperature of 12-14°C.

TERROIR
The wine is produced exclusively with Pinot Grigio grapes. A Guyot training system is used.
The land, located south of Lake Garda, is morainic, with rows exposed to North-South. The planting density is 4,400 vines per hectare.
The average yield is 2 kg per plant.

TOTAL ACIDITY: 6.5 gr./l.

LONGEVITY: 3-4 years

VINIFICATION
The harvest is strictly manual.
The must is obtained by slow and progressive pressing of whole grain grapes. It ferments at a controlled temperature in steel containers with carefully selected yeasts. The Pinot Grigio, stored on yeasts for about 4 months until bottling, is marketed only after about 2 months of bottle aging.
