Grape variety : Nebbiolo
Production area: Monforte d'Alba, South-West exposure 300 m above sea level
Surface area: approximately half a hectare
Harvest: manual in baskets with selection of bunches towards mid-October.
Vinification: selection of grapes on a vibrating table, soft pressing, fermentation in steel tanks at controlled temperature with frequent pumping over and délestages. Maceration for about 20 days.
Aging: at least 30 months in traditional oak barrels and subsequently in bottles in the underground cellar with controlled temperature and humidity until put on sale.
Organoleptic characteristics: the color is an intense red with shades from ruby to garnet. The aroma is complex with hints that recall cinchona and cocoa beans, juniper and coffee roasting. The wine envelops and fills the palate thanks to a full and decisive tannin. A soft and elegant finish increases the pleasantness of the drink with a persistence that never ends.
Food pairings: the wine has body and structure with a well-present tannin ideal with tasty dishes with a clear and evident succulence such as: roast wild boar rack; beef diaphragm with ponzu sauce and sesame with black cabbage; beef rib in red wine; braised in Barolo.
Serving temperature: 16°-18° C.
Storage: keep the bottles lying down in rooms with a constant temperature if possible. It is a wine ready to drink and can be kept in the cellar for 15 - 20 years.
