Grape variety : Nebbiolo
Production area: Monforte d'Alba, South-West exposure 300 masl
Area: about half a hectare
Harvest: manual in baskets with selection of the bunches around mid-October.
Vinification: selection of the grapes on a vibrating table, soft pressing, fermentation in steel tanks at a controlled temperature with frequent pumping over and délestages. Maceration of about 20 days.
Refinement: at least 30 months in traditional oak barrels and then in bottles in the underground cellar with controlled temperature and humidity until sale.
Organoleptic characteristics: the color is an intense red with shades from ruby to garnet. The bouquet is complex with hints reminiscent of cinchona and cocoa beans, juniper and roasted coffee. The wine envelops and fills the palate thanks to a full and decisive tannin. A soft and elegant finish increases the pleasure of drinking with a persistence that never ends.
Food pairings: the wine has body and structure with a well-present tannin, ideal with tasty dishes with clear and evident succulence such as: roast wild boar loin; beef diaphragm with ponzu and sesame sauce with kale; rib eye steak in red wine; braised in barolo.
Service: 16°-18° C.
Conservation: keep the bottles lying down in rooms with a possibly constant temperature. It is a ready-to-drink wine and can be kept in the cellar for 15-20 years.
