ORGANOLEPTIC CHARACTERISTICS
The color is ruby ​​red.
The perfume presents a wide range of notes, initially suggesting blackberry jam and cherries in alcohol and subsequently alluding to notes of roasted coffee, dark chocolate, vanilla and cinnamon. The flavor is harmonious, enveloping and sweet.

RECOMMENDED COMBINATIONS
The robustness of its structure adapts well to the most refined dishes and foods
more noble, such as game and braised meats.
Its strong but refined character also makes it worthy of tasting on its own as a meditation wine. It is served at a temperature of 18°.

TERROR
The terrain, of morainic type, extends south of Lake Garda.
The grapes used to produce this wine are grown in GDC pergola
Trentina, with an average yield of 3.5 kg per plant.

TOTAL ACIDITY: 6.5 gr./l.

LONGEVITY: 6-8 years

WINEMAKING
Corvina and Merlot grapes are used.
The harvest is done by hand between the end of September and the first period of October. The ripest, perfectly healthy bunches are carefully selected. The grapes dry in the fruit cellar at natural temperatures and humidity conditions for approximately 60/90 days, depending on the climatic conditions. The dried grapes are destemmed and softly pressed. The pressed grapes are inoculated with selected yeasts in steel containers. Fermentation continues slowly at low temperature in order to effectively extract the colour, tannins and aromas of the peel. A part then matures in vats of
steel, while a part is refined in barrique.
