From carefully selected Grillo grapes comes this organic and vegan wine, an authentic expression of one of the most prized native Sicilian varieties. The selected vineyards are located on hills between 300 and 600 meters above sea level. Training method: espalier.

The harvest generally takes place during the first 10 days of September. Depending on the quality of the grapes, the bunches are delicately picked and pressed. Maceration takes place at a controlled temperature (28°-29°C) for about 15-20 days in steel tanks. The wine will be refined in steel tanks for 6 months and then in the bottle for a minimum of two months.
