QUALIFICATION: Valpolicella DOC Classico – Organic.
WINE CLASSIFICATION: Controlled Designation of Origin VQPRD
GRAPE VARIETIES: Corvina, Corvinone and Rondinella.
ORIGIN: From our hillside vineyards located in Novaia, Marano di Valpolicella (province of Verona). Hillside vineyards (250-400 m above sea level) in Valpolicella Classica with a predominantly south/southeast exposure.
AVERAGE AGE OF THE VINE: 15 years for Guyot-trained vineyards, 40 years for Veronese pergola vineyards.
TRAINING SYSTEM AND PLANTING DENSITY: Guyot with a planting density of 5000 vines/ha and Veronese pergola with a planting density of 3300 vines/ha.
PRODUCTION PER HECTARE: 9000 kg/ha for the Guyot training system, 10000 kg/ha for the Veronese pergola training system.
HARVEST TIME AND PROCEDURE: Third ten days of September with manual harvesting of the grapes intended for immediate vinification.
VINIFICATION: Destemming and soft pressing of the grapes; fermentation with indigenous yeasts at a controlled temperature in stainless steel tanks and truncated cone-shaped oak vats for 7-8 days; pre-fermentation maceration at a controlled temperature; daily pumping over and delestage; malolactic fermentation until complete in stainless steel. Batonage on the lees in stainless steel.
REFINEMENT: 10 months in steel tanks; 2 months in bottle.
AGING AND STORAGE CAPACITY: It is generally drunk young enough to fully appreciate the fragrance and integrity of the fruit, although it can retain its potential for several years. It is recommended to store the bottle lying down in a dark, cool place with constant humidity and temperature.
TASTING PROFILE: Medium-intense ruby red in color, lively when young; fragrant on the nose, with delicate, floral, slightly fruity aromas (fresh black cherry), combined with hints of spice (cinnamon, nutmeg, pepper). On the palate, it presents moderate alcohol and tannins, good acidity, medium structure, savory, fresh, and very drinkable.
RECOMMENDED PAIRINGS: Appetizers, soups, pasta and risotto, white meats, fish and fresh cheeses.
SERVING TEMPERATURE: 16-18°C.
