Tenuta Licinia's first Sangiovese, from a small 1-hectare limestone plot, at 420 meters above sea level, facing west. It is produced in a decidedly un-Sangiovese way: late harvest, low yields, light extraction and light aging. Yields were 17 hl/ha and we only performed one punch-down. Aging lasted 10 months in large format oak barrels (compared to the typical 36 months in Montalcino) and 7 months in concrete. As with the other crus, only small and sparse bunches are harvested and, even in a small plot, not all soils are exactly the same, so some areas are excluded (where the topsoil is a little deeper and the plants are more vigorous). This is followed by slow manual sorting of individual berries, whole cluster vinification and average fermentation temperatures of 23 degrees Celsius (relatively low).
