Giovanni Allegrini Recioto della Valpolicella Classico is a wine that captures the most ancient and noble soul of Valpolicella. Dedicated to the founder of the modern winery, Giovanni Allegrini , it pays homage to the tradition and identity of a region that has turned appassimento (drying) into an art.
It is made from a selection of the finest Corvina Veronese, Rondinella, and Oseleta grapes, hand-picked and left to dry for approximately one hundred days in well-ventilated drying rooms. During this period, the grapes lose some of their water and concentrate their sugars and aromas, giving the wine its characteristic natural sweetness. After a slow, partial fermentation, the wine ages extensively in oak barrels and then in bottle, achieving a perfect balance of sweetness, freshness, and aromatic complexity.
In the glass, it presents a deep and luminous garnet red . On the nose, it releases intense aromas of cherries in alcohol, ripe red fruits, dried figs, and dark chocolate , accompanied by delicate notes of vanilla and spices. On the palate, it is soft and velvety , with an enveloping sweetness balanced by a lively acidity and fine tannins that give elegance and persistence. The finish is very long, rich in fruity and spicy sensations.
Giovanni Allegrini Recioto is a meditation wine, perfect for accompanying chocolate desserts, red fruit tarts, blue cheeses , or simply as a refined end to a meal.
