Baglio Bonsignore's Cubburo Riserva is the wine that more than any other embodies the depth, memory, and essence of the Naro area. It bears the name of the cubburo , the ancient dry-stone construction that dominates the estate: a symbol of resistance, of peasant labor, of unbreakable roots. It is a carefully chosen name, because this wine is a tribute to the land and to those who have cared for it for generations.
It is made from select grapes grown on the calcareous-clayey soils of the hills at approximately 450 meters above sea level. Here, the Nero d'Avola—the absolute star of the Riserva—finds a perfect balance of warmth, light, and freshness. The altitude lends elegance; the soil provides structure and minerality; the Mediterranean breezes keep the vines healthy, allowing for a slow, concentrated, and harmonious ripening. All this contributes to creating a wine that speaks not only of a grape variety, but of a place.
Time is the other key ingredient of Cubburo Riserva. The long aging in wood refines the tannins, enriches the aromatic profile, and creates a complex and refined profile. By the time the wine reaches the bottle, it has already acquired a profound balance, a maturity that continues to evolve.
In the glass, Cubburo Riserva displays an intense ruby color, interspersed with dark, luminous highlights. The nose is broad and layered: black cherry, plum, spirit-preserved fruit, balsamic notes, and dark spices intertwine with hints of cocoa, fine tobacco, and subtle touches of vanilla. Mineral and earthy notes also emerge, a direct reference to the stones that compose the cubburo and the soils that nourish the vines.
On the palate, it's deep, enveloping, and powerful, yet always balanced by a surprising freshness. The tannins are dense and velvety, the structure is broad and decisive, and the finish is long and harmonious. It's a wine that speaks slowly, sip after sip, revealing new nuances with each taste.
