The 2020 Valpolicella Ripasso Classico Superiore “Ca' del Laito” is one of the most representative expressions of the Tommaso Bussola winery, the fruit of a vision that combines respect for tradition with modern sensibility. It originates in the heart of the Valpolicella Classica area , in Negrar, amidst sun-drenched hills and soils rich in basalt, limestone, and clay. Here, the Corvina, Corvinone, Rondinella, and Molinara vineyards find the ideal environment to create a wine of character and profound elegance.

The harvest, done by hand, takes place between late September and early October, with a careful selection of the finest bunches. After an initial fermentation, the wine is "ripassato" (re-fermented) on the pomace of the house Amarone, using a traditional technique that enriches its body, complexity, and structure. This process, followed by lengthy aging in wood and subsequently in the bottle, gives the wine balance and depth, while maintaining a pleasant freshness.

In the glass, the 2020 "Ca' del Laito" displays an intense ruby red color with garnet highlights. On the nose, it releases enveloping aromas of black cherry, plum, and blackberry, accompanied by notes of tobacco, sweet spices, licorice, and a hint of balsamic that enriches its aromatic profile. The palate is full and harmonious, with smooth tannins and a structure balanced by a pleasant freshness. The finish is long and persistent, with a velvety sensation that invites repeat tasting.

The 2020 vintage stands out for its elegance and its ability to combine power and finesse, offering a wine that's ready to drink yet has remarkable aging potential. It pairs perfectly with red meat dishes, braised meats, game, or aged cheeses, but can also express itself with great charm on its own, as a meditation wine.

Winemaking technique:
The grapes for our Valpolicella Ripasso Classico Superiore are harvested and selected during the first and second weeks of October. Immediately pressed, they are placed in special steel fermentation tanks, where after approximately 24 hours, spontaneous fermentation begins with indigenous yeasts. They remain in contact with their skins for approximately 15 days, with daily pumping over. Once fermentation is complete, the wine is transferred to steel tanks where it ages for 6 months. In April, once the Amarones are drawn off, the Valpolicella Classico is placed in contact with the Amarone skins, where a second fermentation begins, lasting approximately 15 days. During this time, numerous pumping overs and submersion of the skins are performed. Once fermentation is complete, the resulting Ripasso is placed in steel tanks to decant the coarsest lees. After 10 days, it is racked and transferred to wood barrels where it completes fermentation and maturation.

Bottling:
The Valpolicella Ripasso Classico Superiore Cà del Laito is bottled after 3 years of maturation in the cellar and remains in the bottle for 2 months before being released for sale.
Production is approximately 40,000 bottles.
