Emmanuel Rigollot's Tradition is a Champagne that expresses the house's authentic, artisanal philosophy. A cuvée crafted with balance and precision, it's the result of a classic blend of Pinot Noir, Chardonnay, and Meunier , sourced from vineyards cultivated with meticulous attention to the vitality of the soil and the quality of the fruit. It's the label that best captures the winery's identity: essential, elegant, and rooted in its terroir.
The winemaking process follows a respectful and minimally interventionist approach, with controlled fermentations that preserve the purity of the aromas and extended aging on the lees, essential for achieving depth, creaminess, and a fine perlage. The low dosage allows the cuvée to maintain freshness and tension, emphasizing the natural minerality of the chalky soils.
In the glass, it presents a bright straw color and fine, persistent bubbles. The nose opens with notes of white flowers, apple, pear, and citrus, followed by nuances of bread, light toasting, and a delicate chalky finish. The palate is balanced and vibrant: freshness, elegance, and a pleasant creaminess blend in a clean, harmonious finish.
