Mathieu Nicolas' Cuvée 1629 is a tribute to the family's history and its roots in the Marne Valley, a cuvée that combines tradition, precision, and territorial identity. The grapes come from select parcels cultivated with great attention to sustainability, where the strong presence of chalk and clay gives the wine the characteristic freshness and fine minerality typical of the area.

The blend follows the house's classic philosophy, expertly balancing Pinot Meunier, Pinot Noir, and Chardonnay . Vinification in stainless steel preserves the aromatic purity of the grapes, while extended aging on the lees enriches the cuvée with creaminess, depth, and complexity. The moderate dosage allows the wine to maintain an elegant, taut, and perfectly balanced profile.

In the glass, it displays a brilliant straw yellow color , permeated by a very fine and regular perlage. The bouquet is fresh and inviting, with notes of citrus, white fruit, spring flowers, and subtle hints of pastry and chalky minerality.
