Located at the foot of the hill south of the medieval village of Saint-Emilion, the terroir of Château Canon La Gaffelière is made up of clayey-limestone and clayey-sandy soils, very filtering, particularly receptive to heat.
Due to the nature of the soils, the vines have an atypical structure with respect to the denomination, characterized by a perfect balance between Merlot and Cabernet. In this terroir, where maturation occurs very early, the Cabernets flourish remarkably, bringing to the opulence of Merlot a power and aromatic complexity that underlie the natural elegance and finesse of Canon La Gaffelière wines.
By extending parcel management, the host structure of the vat cellar offers the possibility of vinifying perfectly homogeneous batches. The various stages of vinification take place slowly, without excessive increases in temperature, thus expressing the best of the harvest. The refinement, carried out on the fine lees, enhances the intrinsic qualities of the wine by offering each entity the benefit of an individualized treatment. Manipulation and interventions are drastically reduced, adapted to the typicality of each vintage.

Vineyard
Terroir: clayey-limestone. Clay and sand at the foot of the hill.
Production area: 19.5 ha
Grapes: 50% Merlot, 40% Cabernet Franc, 10% Cabernet Sauvignon
Average age of the vineyard: 50 years
Vinification
Harvest: Manual, in crates. Double sorting before and after destemming. No trampling. Arrival of the harvest by conveyor belt.
Vinification: In temperature-controlled wooden vats for 28-35 days depending on the vintage. Extraction by pneumatic punching.
Malolactic fermentation and ageing: In new barriques (up to 80%) on fine lees. Aging and filtration if necessary, depending on the vintage.
Duration of ageing: 15 to 18 months depending on the vintage.
