Chablis 1er Cru "Fourchaume"
2022
75cl
Grape Variety: Chardonnay
Alc. 12.5%
AOC Chablis Premier Cru | 100% Chardonnay | Burgundy, France
Appellation: Chablis Premier Cru “Fourchaume”
Vintage: 2022
Grape Variety: 100% Chardonnay
Region: Fourchaume, on the right bank of the Serein river, Burgundy (France) – a renowned cru for its favorable exposures (south/south-west) and for the balance it achieves between power and finesse.
Organoleptic Characteristics
Color: Clear straw yellow, with greenish reflections, brilliant.
Nose: The nose opens with elegant and fresh notes of light-fleshed fruit – apple, citrus, lemon – accompanied by mineral hints (flint, chalk), a subtle saline sensation that gives immediacy and purity.
Palate: On the palate it is well-balanced: medium-bodied structure, good acidity that supports it, vibrant freshness but never aggressive. The fruity notes persist, accompanied by a mineral-saline aftertaste and a light spicy and citrus touch. Good length and elegance.
Soil & Winemaking
-
Soil: Typical Kimmeridgian soil, rich in limestone and fossils, with marl and some sandy/stony components that add finesse and minerality.
-
Vinification and Aging: alcoholic and malolactic fermentation in steel tanks; in some cases a (though not prevalent) portion of aging in wood or on fine lees to increase complexity and roundness. Typical aging duration around 14-16 months.
Recommended Pairings
This Chablis Premier Cru Fourchaume 2022 is ideal with dishes that can support its minerality and freshness, without overpowering it:
-
Seafood (oysters, clams)
-
Grilled or baked fish, especially with light citrus-based sauces
-
Crustaceans
-
Fresh or semi-aged cheeses
-
Also for refined appetizers or more complex "sea" dishes
Aging Potential
While it can be enjoyed immediately and offers excellent pleasure in the first 2-4 years, this cru has the potential for evolution for at least 5-7 years, during which it can develop additional complexity in its aromas (honeyed notes, hazelnut, more intense mineral nuances) and better integration between acidity and body.
Why choose it:
-
Chablis Premier Cru from a historical and renowned cru
-
Complex, elegant, and gastronomic wine
-
Excellent potential for evolution in the bottle (5–8 years)
An authentic Premier Cru, of great balance and personality, that tells the story of the most refined Burgundy. To drink now or save for special occasions.
"The Philippon family of Château de Fleys are truly interesting and in some ways unusual producers, crafting wines of notable body and character without ever betraying their Chablis origins."
—Jasper Morris, December 2023
