LOCATION: The vines grow on terraces of laminated pebbles, admirably exposed (former bed of the Rhone). The sun's heat stored by the pebbles during the day is returned to the earth and grapes during the night. The yield is deliberately limited to less than 30 hl/hectare.
The manual harvest is completely destemmed, the maceration lasts from 20 to 28 days, then the wine is aged for at least a year in barrels.
CHARACTERISTICS: This wine comes from a rigorous selection of the best grapes. A good work of old, excellently cultivated vines and a production with low yields contribute to the development of a more concentrated wine, more suitable for barrel aging (from ten months to a year). Licorice wine on the palate, full-bodied enough to support any type of game. Its excellent structure makes it a long-lasting wine.
