Pouilly-Fuissé is interesting for its richness and breadth. This wine will seduce you immediately but can also be stored. Perfect to accompany baked pike-perch, Bresse chicken with cream and morels or scallops.

Territory:
Domaine de Pouilly's Pouilly-Fuissé is a wine from several plots in the communes of Solutré-Pouilly and Fuissé. These differences of origin give it all its structure and complexity.

Pressing:
The bunches are pressed in a pneumatic press, then the must rests for 12 hours at a temperature of 18°C ​​to favor natural sedimentation.

Yeasts:
Fermentation with natural yeasts, specific to the region.

Fermentation:
The alcoholic fermentation takes place mainly in stainless steel vats and partly in oak barrels. The malolactic fermentation takes place 100% naturally.

Refinement:
Aging for nine months on the fine lees.
