Whole bunches. Alcoholic fermentation in vats at about 20°C for three weeks. Decanting and racking onto fine lees.
Aging: in barrel for 6 months.
Residual sugar: <2g/litre.
Alcohol content: 13%.
Tasting: Beautiful pale gold color with light straw yellow reflections characterize this beautiful white wine that reveals fine floral aromas (broom, acacia, honeysuckle). On the palate the citrus notes are subtly intertwined. With a beautiful structure, it is round and elastic and offers a relatively powerful aromatic finish.
Ideal temperature: 13°C.

Jean-Paul Dubost owns 8 hectares of Gamay planted in the yellow granite and blue clay of his native village of Lantignié, in the hills immediately west of Regnié and Morgon. His Beaujolais-Lantignié Chardonnay offers much of the complexity of a Bourgogne Chardonnay in a much more modestly priced package.
The origin site of this Chardonnay, fermented and aged in stainless steel and used oak barrels, is on an old riverbed; the soils are dark and loamy, and Dubost notes that it is harvested about two weeks after the reds.
In the glass it has a light straw gold hue with a light silvery hue. Aromas of jasmine, ripe yellow apple, citrus, fresh cream and wet stones translate into crisp, medium-bodied flavors on the palate. Pair it with sole meunière or crab salad and enjoy Chardonnay at its brightest and most lively.
