ORGANOLEPTIC CHARACTERISTICS
Fine and intense, it ranges from floral to small red fruits. The perlage is fine and delicate, with a creamy foam. Decisive and refined, with a beautiful acidic texture that offers freshness and promises longevity.
RECOMMENDED COMBINATIONS
Excellent as an aperitif, it is a versatile sparkling wine that goes well with fish and shellfish dishes (including raw fish), finger food and succulent meats.
The serving temperature is 6°/ 8°.
TERROIR
Three hectares of vineyard land in the Oltrepò Pavese area.
The soils are calcareous, with a medium texture, exposed to the East-Northeast.
The altitude varies from 100 to 250 metres above sea level.
The training system is Guyot with a planting density of 3500/4000 plants per hectare and a maximum yield of 100 quintals of grapes per hectare. In the case of a particularly generous year, a summer thinning is carried out.
TOTAL ACIDITY: 6.5 gr./l.
LONGEVITY: 6-8 years
VINIFICATION
Wine produced only in years in which the climate allows the grapes to reach optimal characteristics of alcohol content and acidity to obtain a sparkling base. The harvest is done by hand in the first ten days of September using small crates.
The grapes are transported to the cellar with refrigerated vehicles. A soft pressing of the whole grapes follows. Only the first part of the must obtained from the lowest pressures is used (about 30% of the total must). After cold static decantation, fermentation at a controlled temperature with selected yeasts follows.
In the following spring, the second fermentation takes place, lasting about 40 days. The wine is then left to mature on the lees for at least 36 months. After disgorging, it rests for at least six months before being marketed.
