ORGANOLEPTIC CHARACTERISTICS
Ruby red speckled with garnet red tips. The varied aroma features notes of vanilla and cherry.
The full, harmonious and velvety flavor culminates in a slightly spicy note.
RECOMMENDED COMBINATIONS
It accompanies any type of braised or grilled red meat in an elegant and pleasant way.
It is excellent with mature cheeses. Served at a temperature of 16-18° C.
TERROR
The land is located on the hills of the Verona area, between 100 and 350 meters above sea level.
It is predominantly clayey and sometimes calcareous. The training system includes a double Veronese pergola. The vines in production are between 20 and 25 years old, with a density of 2,700 vines per hectare and a yield per hectare of 60 hl.
TOTAL ACIDITY: 5.6 gr./l.
LONGEVITY: 6-8 years
WINEMAKING
The harvest takes place at the end of September with rigorous selection by hand. The grapes are dried for 60 days to obtain a notable concentration. Destemmed, they are gently pressed. The fermentation temperature is 25° C. Maceration lasts for 10 days, with punching down three times a day. Once the malolactic fermentation is completed, the wine is aged in wood for a minimum of 2 years, part of it in large 50 hl Slavonian oak barrels and the other part in 225 liter French oak barriques worked at different toasting levels.
