APPELLATION: In the heart of the Côte Chalonnaise (12 km from Chalon-sur-Saône), Mercurey is one of the most significant wine appellations in Burgundy. Protected from humid winds by its hills rightly reminiscent of the Val d'Or, the vineyard also extends over the village of Saint-Martin-sous-Montaigu. The vineyards are located at an altitude between 230 and 320 meters. They are distributed on Oxfordian marl and marl-limestone soils. Limestone and marl to the east and a Jurassic structure with a crystalline base capped with sandstone to the west.
VARIETY: 100% chardonnay
SURFACE: 0.80 hectares
SOIL: Calcareous clayey
VINIFICATION: 100% harvested manually, upon arrival at the company
cellar the grapes are pressed directly without pressing. After a light decantation, the musts are placed directly in barriques. Aged 15 months, 12 of which in barriques (10-15% new).
TASTING NOTES: Color with golden reflections. The nose has sweet, floral and fresh almond aromas. A combination of freshness with tension and spicy notes in the mouth.
AGING POTENTIAL: 7 years
SERVING TEMPERATURE: 13°C
PAIRINGS: Pan-fried river fish, sea fish in white sauce, shellfish,
hard cheeses.
