NAME: From water nymph to god of wine. Santenay boasts a dual vocation, spa and wine. Located at the extreme south of the Côte de Beaune, this wine has delicate nuances depending on the hill. Santenay has a number of urban areas and hamlets. The view from the top of Mont de Sène and Mont Trois Croix stretches far and wide, and human occupation dates back to prehistoric times. The Sorine windmill is also part of the history of the municipality. Greyish limestone occupies the top of the hills reaching an altitude of 500 meters. As the hill descends: oolitic limestone, white oolite, marl and limestone kidneys, lower oolite on a
marl layer up to 300 meters above sea level.

VARIETY: 100% Chardonnay

AREA: 1.1 hectares

SOIL : Limestone

VINIFICATION: 100% harvested manually, upon arrival in the cellar the grapes are pressed directly without pressing. After a light decantation, the musts are directly placed in the barrels. Matured for 12 months, 70% in barrels and 30% in vats.

TASTING NOTES: Color with golden reflections. The nose has sweet, floral and fresh almond aromas. A combination of freshness with tension and spicy notes in the mouth.

AGING POTENTIAL: 7 years

SERVING TEMPERATURE: 13°C

GASTRONOMIC COMBINATIONS: To be combined with a creamy dish such as a risotto or a hard cheese along the lines of the comté.
