Grape variety: Nebbiolo
Production area: Castiglione Falletto, altitude 300-350 masl
Surface: approx. 2 hectares.
Harvest: manual in baskets with selection of the bunches around mid-October.
Vinification: selection of the grapes on a vibrating table, soft pressing, fermentation in steel tanks at a controlled temperature with frequent pumping over and délestages. Maceration of about 20 days.
Refinement: at least 40 months in traditional oak barrels and then in bottles in the underground cellar with controlled temperature and humidity until sale.
Organoleptic characteristics: the color is a deep red with shades from intense ruby to garnet, the scent is very complex. Floral notes of macerated violet and balsamic nuances. Spices reminiscent of licorice stick and nutmeg. The flavor is decisive with a great structure and a soft but well-present tannin!!
Food pairings: the wine has always elegant tannins and an excellent aroma, ideal with succulent dishes with intense flavors such as: paccheri with pork, sausage and veal ragout; mixed boiled meat, boiled vegetables and rubra sauce; entrecôte with black truffle sauce; soft beef with mashed potatoes
Serving temperature: 16°-18° C.
Conservation: keep the bottles lying down in rooms with a possibly constant temperature. It is a ready-to-drink wine and can be kept in the cellar for 12-15 years.
