Grape variety: Nebbiolo
Production area: Castiglione Falletto, with South-West exposure, 300-350 masl
Surface: approx. 1 hectare
Harvest: manual in baskets with selection of the bunches around mid-October.
Vinification: selection of the grapes on a vibrating table, soft pressing, fermentation in steel tanks at a controlled temperature with frequent pumping over and délestages. Maceration of about 20 days.
Refinement: at least 40 months in traditional oak barrels and then in bottles in the underground cellar with controlled temperature until sale.
Organoleptic characteristics: the color is a bright red with shades from ruby to garnet. The scent is very complex with floral notes in particular violet, sweet spices such as cinnamon and nutmeg. The flavor is decisive with a good freshness and a great structure thanks to a vigorous but elegant tannin. The persistent and delicately balsamic finish.
Food pairings: the wine has good tannins but also delicacy, making it pleasant to pair with succulent dishes such as: caciucco; soft crab with singapore sauce; pigeon, curry and fermented apricots; duck in orange sauce; leg of lamb with capunet.
Serving temperature: 16°-18° C
Conservation: keep the bottles lying down in rooms with a possibly constant temperature. It is a ready-to-drink wine and can be kept in the cellar for 15-20 years.
