Grape variety: Nebbiolo
Production area: Castiglione Falletto, altitude 300-350 m above sea level
Surface area: approx. 2 hectares.
Harvest: manual in baskets with selection of bunches towards mid-October.
Vinification: selection of grapes on a vibrating table, soft pressing, fermentation in steel tanks at controlled temperature with frequent pumping over and délestages. Maceration for about 20 days.
Aging: at least 40 months in traditional oak barrels and subsequently in bottles in the underground cellar with controlled temperature and humidity until put on sale.
Organoleptic characteristics: the color is a deep red with shades from intense ruby to garnet, the aroma is very complex. Floral notes of macerated violet and balsamic nuances. Spices reminiscent of licorice stick and nutmeg. The flavor is strong with a great structure and a soft but very present tannin!!
Food pairings: the wine has an always elegant tannicity and an excellent aroma ideal with succulent dishes with intense flavors such as: paccheri with pork ragù, sausage and veal; mixed boiled meat, boiled vegetables and red sauce; entrecôte with black truffle sauce; soft beef with mashed potatoes
Serving temperature: 16°-18° C.
Storage: keep the bottles lying down in rooms with a constant temperature if possible. It is a wine ready to drink and can be kept in the cellar for 12 - 15 years.
