QUALIFICATION: Valpolicella DOC Classico Superiore – CRU “I Cantoni” – Organic.
WINE CLASSIFICATION: Controlled Designation of Origin VQPRD
VINEYARD SURFACE AREA AND SLOPE: 1.5 ha, 10%.
GRAPE VARIETIES: Corvina, Corvinone and Rondinella.
ORIGIN: From our “I Cantoni” vineyard in Novaia, Marano di Valpolicella (province of Verona). A hilly vineyard (400 m above sea level) in the Valpolicella Classica area, with a predominantly south/southeast exposure, and volcanic soil interspersed with thin layers of limestone.
AVERAGE AGE OF VINEYARDS: 20 years.
TRAINING SYSTEM AND PLANTING DENSITY: Guyot with a planting density of 5000 vines/ha.
PRODUCTION PER HECTARE: 9000 Kg/ha.
HARVEST TIME AND PROCEDURE: The grapes are hand-picked in the third ten days of September. Slight natural over-ripening takes place in a traditional hillside drying room for approximately 30 days.
VINIFICATION: Destemming and soft pressing of the grapes; fermentation with indigenous yeasts at a controlled temperature in truncated cone-shaped oak vats for 7-8 days; pre-fermentation maceration at a controlled temperature; daily pumping over and delestage; malolactic fermentation until complete in wood. Batonage on the grapes' own yeasts in the barrel.
REFINEMENT: 18 months in wooden barrels; 4 months in bottle.
AGING AND STORAGE CAPACITY: If well stored, it can withstand aging for up to 10 years; we recommend storing the bottle horizontally in a dark, cool place with constant humidity and temperature.
TASTING PROFILE: Deep ruby red in color; a clean, intense aroma with fruity nuances (red fruit) combined with hints of spice. On the palate, it has a good alcohol content, medium-low acidity, medium tannins, and a nice roundness. It's a full-bodied, structured wine, savory, persistent, and well-balanced.
RECOMMENDED PAIRINGS: Savoury first courses, truffles, red meats, grilled, roast, braised, game, mature cheeses.
SERVING TEMPERATURE: 18°C, allowing the wine to decant before serving.
