QUALIFICATION: Valpolicella Ripasso DOC Classico Superiore – Organic.
WINE CLASSIFICATION: Controlled Designation of Origin VQPRD
GRAPE VARIETIES: Corvina, Corvinone and Rondinella.
ORIGIN: From our hillside vineyards located in Novaia, Marano di Valpolicella (province of Verona). Hillside vineyards (250-400 m above sea level) in Valpolicella Classica with a predominantly south/southeast exposure.
HARVEST TIME AND PROCEDURE: Third ten days of September, manual harvesting of the grapes.
VINIFICATION: Destemming and soft pressing of the grapes; fermentation with indigenous yeasts at controlled temperature in truncated cone-shaped oak vats.
RIPASSO: Traditional winemaking technique that involves the refermentation (second fermentation) in January of Valpolicella wine, produced in September, on the alcohol- and sugar-infused pomace of Recioto or Amarone.
REFINEMENT: 12 months in wooden barrels, 4 months in bottle.
AGING AND STORAGE CAPACITY: If well stored, it can withstand aging for up to 7/8 years; we recommend storing the bottle horizontally in a dark, cool place with constant humidity and temperature.
TASTING PROFILE: Deep ruby red in color; a clean, intense aroma with hints of spice and notes reminiscent of the double fermentation on the Amarone pomace (Ripasso). On the palate, it offers good alcohol content, medium-low acidity, and mature tannins. It is a full-bodied and structured wine, savory, persistent, and harmonious.
RECOMMENDED PAIRINGS: Savoury first courses, red meats, grilled, roasted, stewed, boiled, medium-aged cheeses.
SERVING TEMPERATURE: 18°C, allowing the wine to decant before serving.
