WINE

It presents itself as a bright straw yellow, with a fine, continuous and persistent perlage. The nose recalls grapefruit and citrus fruits, nectarine, white flowers and is clear, with a great impact. On the palate it is broad, fragrant, supported by a freshness that gives energy to the wine and makes it tasty. A vintage sparkling wine of great verticality and strong territorial identity.

Serving temperature: 6°C.


WINEMAKING

Harvest:

manually in boxes, between the second and third ten days of August (with possible variations depending on the seasonal climate trend). Pressing and Fermentation:
after harvesting the grapes immediately undergo soft pressing. The alcoholic fermentation at a controlled temperature then begins. Malolactic fermentation is not carried out.

1st refinement:

in steel for approximately 7/8 months with repeated batonnages, before bottling for secondary fermentation according to the classic method.

2nd refinement:
the wine matures in the bottle on its yeasts for at least thirty months and refines a few months after degorgement before its debut on the markets.

Altitude : 270 - 430 masl
Exposure : North, North-East, West.
Soil composition : clayey-limestone marl.
Year of planting : 1978 - 2014.
Training system : Guyot.
Variety : Chardonnay 85% - Pinot Noir 15% (approximate percentages).
