WINE
The Boito Vineyard is located at the top of the Cru Rizzi. The soil of this vineyard, geologically younger, unlike the surrounding areas is deeper and clayier. Thus is born a muscular and classic wine with great aging potential. Violet, ripe plum, liquorice and leather coexist. For this reason, Barbaresco Enrico Dellapiana "makes both hands available", one for the winemaking and the other for the paintings that appear on the label (different in each of the vintages produced).

Serving temperature: 16°C.

WINEMAKING

Harvest:

manually in boxes, in the first ten days of October (with possible variations depending on the seasonal climate trend). Fermentation and maceration:
at a controlled temperature in steel tanks without exceeding 30°C, for a duration of approximately 4 weeks. At the end of the primary fermentation, malolactic fermentation followed which normally ends in about a month.

Refinement:

in large Slavonian oak barrels for approximately 18-21 months and subsequently in the bottle before marketing (at least 50 months from November 1st following the harvest as per the regulations).

Altitude : 240 - 310 masl
Exposure : South, South-West.
Soil composition : calcareous-clayey marl. Year of planting : 1972 - 1995.
Training system : Guyot.
