THE WINE
The idea of bottling Sterbu (from the Piedmontese dialect for "cloudy") was born from evenings of conviviality and friendship at the Felicin restaurant in Monforte d'Alba, moments in which Enrico used to bring tank samples of Chardonnay without filtration and clarifications. Sterbu is fresh and carefree, it is the wine of the afternoon by the pool, of picnics and trips to the seaside; a white “sur lies” characterized by a notable sapid-mineral persistence.
Serving temperature: 8-10°C.
WINEMAKING
Harvest:
manually in boxes, between the end of August and the beginning of September (with possible variations depending on the seasonal climate trend).
Pressing and Fermentation:
after harvesting the grapes immediately undergo soft pressing. The alcoholic fermentation at a controlled temperature then begins; malolactic fermentation is not carried out.
Refinement:
in steel tank for about six months with repeated battonages; bottling takes place without clarification or filtration.

Soil composition : marly-calcareous with sandy veins.
