Denomination : Amarone della Valpolicella Classico DOCG
Castel 's Amarone della Valpolicella Classico DOCG is a deep ruby red wine with sweet aromas of cherry, blackberry, and raspberry, combined with evident balsamic notes. On the palate, it is warm and soft, yet with a pleasing freshness.
Production area : Negrar di Valpolicella
Grapes : Corvina, Corvinone, Rondinella and Molinara dried
Soil type : Limestone - Silt - Clay
Altitude : 325 m above sea level
Vinification and aging : Fermentation with selected yeasts at a controlled temperature (24°C) takes place in a horizontal fermenter for approximately 20 days, followed by malolactic fermentation to lower the wine's total acidity. The wine is aged in new and second-passage barriques for approximately 24 months and 12 months in the bottle.
Drying : Using a natural method in well-ventilated rooms with periodic checks on the health of the grapes and pressing in January.
Alcohol content : 16.5 or 17% vol. depending on the vintage
Pairings : Mature cheeses. Also excellent as a meditation wine after a meal, alone or with chocolate.
Recommended serving temperature : 16/18 °C
