IGT Toscana Rosso

Certified organic

Il Sasso di Fata 2019 represents the first vintage of a new movement in Tuscan Cabernet. It is a wine produced in the clos style, with the grapes coming from a small vineyard with a specific subsoil and therefore the wine is only produced in extremely small quantities. The wine produced at Sasso di Fata is generally said to resemble the soft floral and textural wines of Margaux more than the more full-bodied wines of Pauillac, the region traditionally associated with Tuscan Cabernet.

The distribution of this wine is limited due to the size of the production. Some of the wine is sold on allotment.

Subsoils
Sasso di Fata vineyard. 3.5 hectares of land on a gold colored flaky shale - the subsoil is marl to some extent but a particular iteration of that subsoil which has taken on a golden color from the calcium in the soil. Loam is a thin 20 cm layer of clay loam filled with rock fragments and flakes.

Viticulture
The viticulture is biodynamic and certified organic. The goal is to provide a healthy vine that gives its energy to the formation of complex grapes. The vines are a mixture of spurred cordon and guyot. The yield per vine is extremely low and the production varies from 20 to 35 Hl per hectare.

Variety
Sasso di Fata 2019 is composed of Cabernet Sauvignon (70%) Cabernet Franc (25%) and Petit Verdot (5%).

The vintage
2019 was characterized by a relatively cold May and then again by August. But the final stages of the ripening season were characterized by intense heat and a wide diurnal range. The harvest took place in mid-October.

Vinification
16 months in second passage French oak tonneaux (500L).

Alcohol
14.5%

Tasting note
The nose is expressive and racy with notes of fresh fruit, flowers (rose bud) and freshly ground rose berries. The palate is dynamic and elegant, maintaining the floral dimensions of the nose on the palate but also opening with a fresh cassis. The balance with the wood is satisfying and on the finish there is a saline and graphite schistose note. It's a deep and pleasant wine that captures a real notion of where it's made.
