Manual in crates with strict grape selection and search for the best balance between acidity and sugar content. WINE YIELD: 51% VINIFICATION: white vinification, with soft whole-bunch pressing, alcoholic and malolactic fermentation in stainless steel; for the Pinot Noir component, aging in barriques for 6 months before tirage, then in bottle for 42 months on the lees. DOSAGE: 2 g/l ALCOHOL: 12.5%
