Tommasi 's Valpolicella Classico Superiore Ripasso is one of the most elegant and recognizable interpretations of this traditional Veronese technique. It is made in the heart of the Valpolicella Classica area from Corvina, Rondinella, and Corvinone grapes, grown on sunny, limestone hills.

After the initial fermentation, the wine is "repassed" over the Amarone pomace, from which it acquires structure, warmth, and aromatic intensity , while maintaining the freshness and pleasantness typical of Valpolicella. It then ages for approximately twelve months in Slavonian oak barrels , according to the traditional Tommasi family style.

In the glass, it presents a deep ruby ​​red color and a rich bouquet of ripe cherries, dried plums, notes of cocoa, and sweet spices . On the palate, it is soft and velvety , with fine tannins and a perfect balance between body, elegance, and freshness. The finish is long, harmonious, and pleasantly fruity.

Ripasso Tommasi is a versatile wine with great personality, ideal with red meats, game, roasts and mature cheeses , but also perfect to accompany moments of relaxation and conviviality.

Sensory description
A deep and luminous ruby ​​red, the nose is rich and intensely spicy, with notes of ripe cherry jam, tobacco, and black pepper. On the palate, it is elegant and full-bodied, with soft, silky tannins and a long finish.

Pairings
Suitable for land-based dishes, it is excellent with boiled, braised and grilled red meats.

Origin
Vineyards of the Conca d'Oro Cru, in the hilly area of ​​Valpolicella Classica.

Grape
Corvina 70%, Rondinella 25%, Corvinone 5%

Vinification and Aging
Fermentation in steel barrels for approximately 15 days. Refermentation on the Amarone pomace for approximately 12-13 days. Aged for at least 18 months.
In 65 hl Slavonian oak barrels. Aged for 6 months in bottle.
