Vineyards:
The name "Les Vignes de la Roche" refers to the steep rock formation, which rises just above the vineyards, used for this wine. The wine is made from grapes from 3 different vineyards: "La Cassine" "La Guiche" and "Le Pinacle". All the vineyards are located in continuation of the famous Montagny 1. Cru slope in Jully-lés-Buxy. “La Cassine” has an altitude of 350m and contributes with minerality and freshness. “La Guiche” has an altitude of 225m, with a deep soil of limestone, clay and small stones. Adds exotic fruit and body. “Le Pinacle” (220-280m and part of the May-Cottin vineyard) which is classified as a “Montagny village” contributes high intensity and minerality. 25% of
the wine is based on “Le Pinacle” grapes.

Vinification:
All the grapes are harvested and selected by hand. The vinification takes place in French oak of which 10% is new. The fermentation is based on autochthonous yeasts and lasts, together with the malolactic conversion and the maturation 8-9 months. No transfer takes place. During this period the wine is in contact with its fine lees - the batonnage is carried out, when we believe that the wine can benefit from it - giving greater body and structure. Subsequently the wine spends 2 months in steel tanks to decant before bottling without filtration.

Tasting notes and service tips:
The very intense nose shows fresh, delicate green fruit - with a nice touch of citrus, peach and apricot. The minerality is perceived on the palate, a soft texture supported by a crunchy acidity. A decent slightly toasted cask note also comes to mind. The wine is a well-rounded white wine perfect for vegetarian dishes, fish and light meats. Serve at 7-10 degrees in large glasses. It does not require decantation.
Drinking window:
Up to 5 years.

Albert Sounit is based in Rully and Jully-lés-Buxy and is focusing on producing high quality Cote Chalonnaise wines. The grapes come from our own 16.5 hectares and from purchases from long-standing grape partners. Both Cremant, red and white wines are produced. We follow the codes of the "Agriculture Raisonnée" and we started the conversion to organic farming in 2016.
