Vineyards:
The Bourgogne Rouge “Vieilles Vignes” is made from Pinot Noir coming from 2 different parcels. The majority comes from the “Les Saulniers” parcel, a 1.37 ha south-facing parcel with vines 20 – 70 years old (the younger vines are used for the Cremant de Bourgogne).
The soil is calcareous with a deep clay and slate loam. The grapes from this parcel give intensity and concentration. The second parcel is “Le May” – a parcel located on a steep east-facing slope at high altitude, a continuation of the Montagny 1er Cru. "Le May" has a high limestone content and contributes fruit, finesse and minerality.
Aromas and flavours: Deep, intense red and black fruits – cherries, plums and strawberries. Black pepper, mocca, vanilla and licorice.
Grape variety: 100% Pinot Noir
Serving temperature: 14-16° C
Aging potential: Up to 6 years.
Pairing: All-round wine – poultry, pork, veal and game.
Winemaking:
All grapes are harvested by hand. The sorting takes place 3 times: the first at the harvest of the grapes, the second at the emptying of the buckets at the end of the rows and finally at the sorting table in the cuverie. The grapes are destemmed before being transferred to the fermentation vats. We do a cold maceration at around 9 degrees for 5-7 days to extract flavor and color with frequent pumping over. Subsequently the temperature is increased which initiates alcoholic fermentation. We only use natural yeast. During fermentation, which lasts 10 to 12 days, we do some light punching down. Once the alcoholic fermentation is complete, we continue the maceration for 2-4 days. After pressing we mature the wine in French oak for 10 months – 10% new. Half of the barrels are 228 L while the remaining part is divided between 300 and 500 L. Finally, the wine is decanted into stainless steel tanks for decanting and is bottled after 3 months without filtration.
Tasting notes and serving recommendations:
The nose is deep and concentrated with both red and dark fruit - cherries, plums - with a touch of black pepper, mocha, licorice and vanilla. On the palate it is fruity with good body and intensity. The wine is an "all-round" table wine, it pairs very well with white meats,
pork, veal and even game. Serve in large glasses at 14 – 16 degrees.
Drinking window:
Within 6 years. However, with proper storage and in good years, we have had great experience with wines over 10 years.
