Aromas and flavours: Soft and delicate nose – peach and perfume. Soft and fruity palate with fine acidity and good persistence
Grapes: Semillon, Ugni-Blanc, Macabeu (Viura), Melon

Aging potential: 2 years after disgorgement
Pairing: Aperitif and light courses.
This wine is made from grapes from France, outside Burgundy. The sources of the grapes are mainly Loire, Charentes, Lanquedoc and southwestern France.
Caprice is a Metodo Classico, which means a minimum of 9 months of aging on its lees - but Albert Sounit ages it longer to obtain a finer foam with small bubbles and a more refined fruit.
