Aromas and flavors: Soft and delicate nose – peach and perfume. Soft and fruity palate with fine acidity and good persistence

Grape variety: Semillon, Ugni-Blanc, Macabeu (Viura), Melon

Aging potential: 2 years from disgorgement
Pairing: Aperitif and light dishes.

This wine is made from grapes sourced from France, outside of Burgundy. The sources of the grapes are mainly Loire, Charentes, Lanquedoc and southwestern France.

Caprice is a Classic Method, which means a minimum of 9 months of aging on its lees - but Albert Sounit ages it longer to obtain a finer foam with small bubbles and a more refined fruit.
