Vineyards :
The grapes for this Cremant come exclusively from estate vineyards located near our cuverie in Jully-lés-Buxy. Cremant takes its name from the main parcel “Les Châtaignier” – meaning chestnut – because of the trees on the edge of the vineyard. This Cremant is a blend of Pinot Noir, Gamay and Pinot Beurot (local name for Pinot Grigio).
Winemaking :
Cremant de Bourgogne must be produced according to the Méthode Traditionelle. To obtain the rosé color, the grapes are pressed very slowly – about 10 hours – to obtain the right level of colored pigments from the skins. The base wine is then fermented
in stainless steel tanks at low temperature – around 14 degrees. The “assemblage” – assembling the different cuvées of the base grape variety to create the best base wine – takes place in January after the harvest. The assembled base wine is bottled over the course of months
following is the assembly and refermentation in the bottle. After 14-24 months on the lees, disgorgement takes place: the requirement for Cremant de Bourgogne is only 9 months. The dosage is relatively low, with a residual sugar of between 6 and 7 grams per litre.
Tasting notes and serving recommendations :
On the nose it is very fruity and lightly scented. Notes of red fruit – strawberry, cherry, which are also reflected on the palate. The foam is fine and soft and the finish is slightly creamy. It is a perfect aperitif, but also goes well with light fish dishes and salads. It also goes well with fruit-based desserts. Serve at 6-7 degrees.
Aging potential : Drinkable upon release. If you prefer fresh primary fruit we recommend enjoying this crémant within 2 years of disgorgement. If you prefer more complexity and tertiary notes, you should wait 3 - 4 years. The disgorgement date is printed on the back label.
