Aromas and flavors: The nose is very pure and fruity with good depth – green apples and pears with a touch of citrus and brioche. On the palate it is elegant and fruity and the foam is very fine and soft.
Grape variety: 65% Pinot Noir, 30% Chardonnay, 5% Aligote
Serving temperature: 6-7°C
Aging potential: Up to 4 years after disgorgement.
Pairing: Perfect as a starter, but also pairs well with shellfish, oysters, light fish and salad.
Vineyards: 75% of the grapes for this Cremant come from estate vineyards located near our cuverie in Jully-lés-Buxy. Cremant is a blend of 65% Pinot Noir, 30% Chardonnay and 5% Aligote.
Cremant de Bourgogne must be produced according to the Méthode Traditionelle. The base wine is fermented in stainless steel tanks at a low temperature – around 14 degrees. The “assemblage” – the blending of the different cuvées of the base grape variety to create the best base wine – takes place in January after the harvest. The assembled base wine is bottled in the months following assembly and the refermentation takes place in the bottle.
After 14-24 months on its lees – the requirement for Cremant de mousse.
Tasting notes and serving recommendations: The nose is very pure and fruity with good depth - green apples and pears and a touch of citrus. There are notes of brioche resulting from the permanence of the wine on the yeasts. On the palate it is elegant and fruity, with a good level of acidity. There is a nice body, led by the Pinot Noir. The foam is very fine and soft on the palate. This Cremant is a perfect aperitif, but also pairs well with shellfish, oysters, light fish and salad. Serve it at 6 – 7 degrees.
Drinking period:
drinkable upon release. If you prefer fresh primary fruit we recommend
enjoy this crémant within 2 years of disgorgement. If you prefer a larger one
complexity and tertiary notes, you should wait 3 - 4 years. The vintage and disgorgement date is printed on the bottle.

High quality Cote Chalonnaise. The grapes come from our 16.5 hectares and from purchases from
long-time partner. Both Cremant wines, red and white, are produced. Let's follow the
codes of “Agricoltura Ragionata” and we started the conversion in 2016
to organic farming.
