Vineyards :
“Les Chaniots” is 1. Cru and comprises 10.7 hectares, of which Domaine Albert Sounit owns 1.72 hectares.
“Les Chaniots” faces east and is relatively steep. In the northern part of
vineyard the limestone bedrock almost meets the surface with only a clayey soil
very superficial. In the southern part – called “La Cabane” – the appearance is convex with more clay and sand in the topsoil. Domaine Albert Sounit owns a total of 6 parcels in “Les Chaniots”. In the northern part we have plots with vineyards planted in 1928 and in the southern part we have vineyards with ages ranging from 45 to 70 years.
All grapes are harvested and selected by hand. For “Les Chaniots” we only use old vines with an average age of over 70 years. Most of the grapes come from northern plots, which have the highest limestone content. In some years it is included
a small portion of grapes from southern parcels. The winemaking takes place in French oak of which 20% is new – approximately 300 L, approximately 228 L. The fermentation is based on native yeasts and lasts, together with the malolactic conversion and maturation, 16 months.
No racking occurs. During this period the wine is in contact with its own
fine lees: batonnage is limited as the must itself has body and intensity. Subsequently the wine spends 2 – 3 months in steel tanks to decant before bottling without filtration. NDTech caps are used.
Tasting notes and serving recommendations : The nose is deep, complex and very intense. Notes of nectar, peach and apricot. On the palate it is powerful, yet mineral, with a velvety texture. The acidity is very crisp and the finish is long. The wine pairs very well with more intense fish dishes, light meats and cow's milk-based cheeses. And try it with mushroom stew too. Serve at 8 – 11 degrees in large glasses.
Aging potential:
easily up to 6 years. In good years and in suitable storage conditions,
we have had good experience with bottles over 10 years old.
Albert Sounit is based in Rully and Jully-lés-Buxy and is focusing on producing high-quality Cote Chalonnaise wines. The grapes come from our own 16.5 hectares and from purchases from long-time grape partners. Both Cremant, red and white wines are produced. We follow the codes of the “Agriculture Raisonnée” and began the conversion to organic farming in 2016.
