Vineyards :
"Le Bas des Chênes" covers 1.72 hectares and the vines were planted in 1981. The vineyard is located on the marked slope to the west of Rully - bordering the Rully 1er Cru vineyards "Margotés" and "Grésigny". The soil is dominated by limestone and the loam is clayey and gravelly. The vineyard faces east/south-east. The cold, calcareous soil creates a feminine and mineral Pinot Noir.

Winemaking :
All grapes are harvested by hand. The sorting takes place 3 times: the first during the harvest of the grapes, the second during the emptying of the buckets at the end of the rows and finally at the sorting table. The grapes are destemmed before being transferred to the fermentation vats. We carry out cold maceration at around 9 degrees for 5-7 days to extract flavor and color with frequent pumping over. Subsequently, the temperature is increased which begins the alcoholic fermentation. We only use natural yeast. During fermentation, which lasts 7 to 9 days, light pumping over is carried out. Once the alcoholic fermentation is complete, maceration continues for 2-4 days. After pressing we mature the wine in French oak for 8 months. To preserve the fruitiness and finesse of the wine we only use 10% new oak and the barrels are mainly 300 and 500 L. Finally the wine is decanted into steel tanks for decanting and is bottled after 3 months without filtration.

Tasting notes and serving recommendations:
The nose is intense and delicate dominated by red fruit - cherry, strawberry - and sweet spices. On the palate it is very fruity and juicy, subtle and elegant. The tannins are present, but soft and ripe. The wine is mineral and the finish is long. The wine pairs very well with poultry, egg dishes, salads and delicate cheeses. If served fresh it also goes well with fried fish. Serve at 14 – 16 degrees in large glasses.

Both Cremant wines, red and white, are produced. We follow the codes of "Agriculture Reasoned" and started the conversion to organic farming in 2016.
