Vineyards :
"Les Saint-Jacques" is located north of Rully, just below the 1. Cru vineyards "Clos de Chaigne" and "Clos Saint-Jacques". The vineyard faces east and extends over 15.89 ha.
Domaine Albert Sounit does not own the vineyard but has been purchasing grapes from a small plot of 0.74 hectares since 2001. The vines were planted in 1985. The soil is predominantly limestone with a thin surface layer of clay, sand and gravel. The name of the plot refers to the ancient pilgrimage route from Langres through Beaune, Chagny, Rully and beyond to Santiago de Compostella, which passed through this plot.

Winemaking :
The wine is vinified on 100% French oak of which approximately 18% is new oak. Half of the barrels are 300 L while the other half are 228 L. The fermentation is based on native yeasts and lasts, together with the malolactic conversion and maturation, 10 months. No racking occurs. During this period the wine remains in contact with its fine lees - batonnage is carried out when we believe the wine can benefit from it - giving it more body and structure. Subsequently the wine spends 2 months in stainless steel tanks to decant before bottling without filtration.

Tasting notes and serving recommendations:
On the nose it is very floral and fruity, with notes of white flowers, pink grapefruit and minerality. You also sense some exotic fruits, such as pineapple and mango. The fruitiness continues on the palate, framed by a very present minerality. Well-balanced acidity
ensures a fruity and lively aftertaste, which remains long on the palate. The wine is an excellent whole-meal wine for fish, but also goes very well with light meats and poultry.
And try it with the fried scallops of Saint-Jacques, and you will discover that it is not just the name that links them together. Serve at 8 – 11 degrees in large glasses.

Aging potential:
Easily up to 6 years. In good years and under suitable storage conditions, we have had good experiences with bottles more than 10 years old.

Albert Sounit is based in Rully and Jully-lés-Buxy and is focusing on producing high-quality Cote Chalonnaise wines. The grapes come from our own 16.5 hectares and from purchases from long-time grape partners. Both Cremant, red and white wines are produced. We follow the codes of the “Agriculture Raisonnée” and began the conversion to organic farming in 2016.
