In the lowest part, an old alluvium, therefore halfway up the slope, the clayey-limestone soils are well drained thanks to a scree of rocky debris. Going further up we find Oxfordian marl (Jurassic), brown calcareous and brown calcareous soils. Iron oxide sometimes reddens the earth. Exposures to the east and south. Altitude: between 250 and 330 meters.

Tasting:
We must beware of pre-packaged ideas: the fame of Pommard in the nineteenth century earned it the image of an insistent and virile wine. In reality, terroirs, winemaking and age shade this portrait to offer a wine rich in sensitivity. Intense red, dark ruby purple, her dress with mauve shimmers recalls Victor Hugo's words: "It is the struggle of day and night!"
Aromas of blackberry, blueberry or currant, cherry stone, ripe plum. A feline and wild evolution is not uncommon over time. Maturity directs him towards leather, chocolate, pepper. A wine to be left to age a little so that it opens up completely: round structure, delicate and decisive structure, fruity on the palate, the tannic paste then takes on its roundness. Rich ? Certainly.
This illustrious representative of the Côte de Beaune loves wild meats, as its tannins are massive and dense. Game with fur and feathers, braised or roasted, will find an essential partner in the Pommard. Stewed beef, lamb or poultry steaks will also appreciate the firm texture of its tannins and concentrated aromas. He naturally appreciates the company of cheeses with developed flavors: Époisses, Langres, Soumaintrain but also Comté.
