Origin: Northern slope of Etna, Solicchiata Contrada Pontale Palino
Vineyard: Altitude of 650 metres above sea level, bush vines trained on trellises
Soil: Very fine and deep volcanic ash on the 1911 lava flow
Climate: High hill climate with strong temperature excursions between day and night
Harvest: First half of October, manual in crates
Vinification: Soft pneumatic pressing of whole grapes, cold decantation of the must, fermentation in stainless steel at controlled temperature
Maturation: In stainless steel, on fine lees, until bottling
Tasting notes: Straw yellow, intense and bright. Intense, rich and complex, with freshfruity and floral notes, accompaniedby hints of white fruit and underlying notes of aromatic herbs and lava stone.
Savory, broad, supported by a pleasant freshness, juicy and lively on the palate, excellent structure and persistence.
Ageing: 5/6 years
Serving temperature: 9-10 °C
