Tasting Notes : Greenish yellow in color, this wine has fresh aromas with citrus, floral, and mineral notes. The vibrant taste reveals a structured wine with excellent acidity and a lingering, mineral finish.

Pairing : It pairs perfectly with appetizers, fish dishes, some white meats, cheeses and apple pie.

Vinification : After being harvested in 20 kg crates, the grapes were stored in a cold room at 4°C for 24 hours before being processed. They were then gently pressed and the must was statically decanted. Fermentation took place in French oak vats (20%) and stainless steel tanks (80%).

On the fine lees for 9 months, partly in stainless steel and partly in French oak vats.
